Summary

The primary objective for the Director of Dietary Services is to set consistent goals for the highest quality service in the Dietary Department at Landmark. The Director of Dietary Services will work in cooperation with the Chief Clinical Officer, Facility Dietary Managers, and Executive Directors toward the goal of achieving economies of scale and cost containment. He or she directs Dietary Department across multiple facilities to prepare and cook family style meals for Landmark, ensuring that kitchens continuously meet all standards of the FDA Food Code. This position provides direction, planning, organization, and supervision of all dietary services to ensure that the department provides efficient, high quality meal service and nutritional care to patients. The position provides strategic direction to ensure the department goals are consistent with organizational objectives.

Responsibilities:
Design and maintain a rotating 14-day menu to be used across all facilities and update it seasonally
Build out alternative one-week menus for special diets (i.e. Vegan, Halal, Kosher, low sodium, etc.)
Ensure all menus are approved by a dietician that is licensed in the facility's state prior to use
Ensure all menus are reviewed in accordance with state guidelines
Create and maintain recipe cards specifying how to prepare said menu item for each menu item
Build and maintain order calculators and ingredients lists to assist dietary managers for each recipe. Calculators should be built in a way that allows dietary managers to input census data.
Approve all food orders across all facilities weekly
Create policies, procedures, and training to ensure compliance with all aspects of USDA food code
Ensure food is delivered on time, on temperature, and on budget at every facility every meal
Ensure all kitchens meet FDA standards and keep policies, procedures, and staffing requirements for kitchens are up to date
Establish and maintain working relationships with vendors for all facilities
Perform all other tasks assigned by supervisor
Travel when necessary
Pay for travel expenses with a personal credit card prior to travel, with reimbursement to follow
Oversee dietary/food purchasing activities including, positioning, strategy development, vendor negotiations, contract review, and pricing/costing
Hire, grow, and develop current and future talent, providing positive and constructive feedback through coaching, mentoring, and counseling
Possess the ability to make independent decisions when circumstances warrant such action
Be knowledgeable of practices and procedures as well as the laws, regulations, and guidelines governing functions in care facilities
Implement and interpret the programs, goals, objectives, policies, and procedures of the department
Perform proficiently in all competency areas including but not limited to patient rights, and safety and sanitation
Maintain professional working relationships with all associates, vendors, etc

Position Requirements

Qualifications
Have Safe-Serve Sanitation training certificate.
Must be a Registered Dietician
Bachelor's degree in Nutrition or related field preferred
Must hold an active Registered Dietician license in a jurisdiction within the United States
Must have a minimum two (2) years supervisory experience
Must have experience managing budgets, staff, and maintaining a high level of consistency across multiple facilities.
