About Cutalong at Tributer Resort
Located in Mineral, Virginia, Cutalong at Tributer Resort spans 1,000 acres bordering Lake Anna and is poised to become a premier destination in Virginia. The development plan includes residential entitlements, featuring estate homes and homesites, executive homesites, cottages, villas, townhomes and luxury condominium accommodations. The resort's planned amenities include a spa & wellness center, multiple restaurants, social and conference meeting space and a rich array of resort activities all anchored by the prestigious Cutalong Golf Club.

Position Overview:
The Executive Chef (EC) supervises and coordinates all culinary and related operations of the restaurants and outlets. The EC reports to the Cutalong Club General Manager and the Reef Regional Director of Food and Beverage. These two positions will work together to ensure that the managers and staff are executing their responsibilities and that the F&B service and quality expectations are met.

Pre-Opening Duties:
  • Help to ideate and create concepts, identities, and POVs for all menus
  • Lead menu development for all time periods including breakfast, lunch, brunch, dinner, bar, and special events
  • Establish labor planning for BOH for the restaurant.
  • Set standards to be used by chefs in kitchens, to include: Recipe outlines, Order and inventory sheets, Station guidelines and kitchen flow, Plate presentation guidelines, Training programs, HACCP guidelines, Menu descriptions
  • Lead recipe testing and costing
  • Work with General Manager, Project Manager, and Restaurant/Beverage Manager in procurement of BOH wares, catering wares, and dining wares
  • Work with the General Manager and Project Manager to establish standards and achieve final operating permits and approvals from the Virginia Department of Health and County of Louisa
  • Support the General Manager and Human Resource Managers in the hiring process of all managers and kitchen staff
  • Create plan and oversee the pre-opening and soft opening events
  • Onboard, train, schedule, supervise, motivate, and lead staff throughout pre-opening to ensure a successful launch

Opening Duties:
  • Establish quality controls of food execution, taste, and presentation
  • Achieving and maintaining labor and COGS controls to meet or exceed budgets
  • Routine checks of food, beverage, and service to meet quality standards supervises and coordinates all new menu change implementations
  • Support the General Manager and Reef Director of Food and Beverage to discover and create new vendor partnerships
  • Ensures the kitchen is immaculately clean with 100% compliance to all regulatory requirements for food handling, sanitation, employment law, and safety
  • Create a great work environment for associates by leading daily stand ups and monthly team meetings and establish clear lines of communication

Qualifications:
  • Degree in Culinary Arts is preferred
  • Relevant fine dining, banquet and management experience in major metropolitan cities and or destination resort projects
  • 5+ years in high-level management
  • Pre-Opening experience preferred
  • Innovative technical food & beverage knowledge
  • Excellent communication skills, both verbal and written
  • Business and management principles involved in strategic planning
  • Knowledge in MS Office, Google, Power Point, Date Code Genie and popular POS and Reservation systems
  • Budgeting professional
  • Experienced with principles and processes for providing customer and employee services

Physical Requirements:
  • Most work tasks are performed indoors with some outdoor activity
  • Position requires walking and giving direction most of the working day
  • Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening, and hearing ability and visual acuity. Ability to stand for long hours and lift 50lbs.
