- Position Summary
- This is a leadership position responsible for food production activities from recipe development to execution. The Executive chef leads the strategic culinary initiatives of the Food & Nutrition Services department and provides high quality, innovative, and safe product for patients, caf locations, and catering services on multiple campuses. This position oversees the Managers of the retail cafeteria operations, including offsite locations.
- Required Minimum Knowledge, Skills, and Abilities (KSAs)
- Education: Knowledge of food production practices normally acquired through a five year Technical program Culinary Arts
- License/Certifications: Serve Safe Certification is required. American Culinary Federation certification preferred.
- Experience: 5 + years' experience in a head chef or managerial kitchen position with extensive cooking experience and proven leadership and creative culinary abilities. Knowledge of Quality Improvement principles. With excellent time management and organizational skills
- Knowledge of the consistent preparation of innovative and creative cuisine of the highest quality, presentation and flavor for the cafeteria, catering, and patient meal service resulting in outstanding patient and customer satisfaction.
- Must be creative, enthusiastic and passionate about food and excellent customer service.
- Ability to teach preparation according to well defined recipes and follows up and discusses ways of constantly improving the cuisine.
- Ability to identify problems, to make recommendations for solutions and put recommendations into effect.
- Knowledge of proper sanitation procedures, infection control procedures and HACCP procedures.
- Ability to effectively manage multiple off-site retail operations efficiently.
- Ability to implement effective marketing and merchandizing techniques and strategies to increase sales revenues.
