Summary: The Director Food Safety & Quality Assurance, Regulatory & Supplier Onboarding is responsible for directing and implementing company's overall Food Safety (FS) & Quality Assurance (QA) management functions and systems.
Essential Functions:
Creates and ensures implementation of standard operating procedures (SOPs), policies, and FS/QA assurance internal audit programs
Manages the development, revision, evaluation and implementation of food safety policies, procedures, standards, compliance, and decisions
Ensures compliance with federal, state, and local regulatory food safety requirements
Communicates Local Supplier Program requirements with Restaurant Development, Culinary, Commercial, Supply Chain, Operations, and local suppliers
Creates and implements Hudson retail supplier onboarding processes
Coordinates supplier onboarding with NSF TraQtion; acts as liaison between F&B/Duty Paid/ Duty Free internal stakeholders, suppliers, and NSF TraQtion
Updates supporting documentation including the Local Supplier Audit Flowchart, HMSHost Supplier QA Requirements, HMSHost Supplier Food Safety Program, Regulatory Requirements for Food Suppliers
Partners with Supply Chain, Culinary, and Restaurant Development to eliminate unapproved suppliers and deactivate suppliers that do not continue meet requirements
Monitors FDA/USDA, CDC, local health department regulations and updates, partners with regulatory agencies to influence outcomes and new requirements, and completes biannual FDA registrations
Provides guidance and support for HMSHost/Hudson CRDCs
Directs Operations on how to resolve brand and/or regulatory issues
Documents and communicates Ecolab Chemical and Pest Service Protocols to Operations; ensures regular and emergency services are performed
Reporting Relationship: The Director FS & QA, Regulatory & Supplier Onboarding reports into the VP Food Safety & Quality Assurance
Requirements:
Minimum Qualifications, Knowledge, Skills, and Work Environment:
Education and Experience: The combination of education and professional experience must exceed 8 years:
o In a leadership role: Requires 3 years of experience leading a senior level team of operations professionals engaged in developing and executing Food Safety & Quality Assurance programs
o In a technical role: Requires 8 years of experience engaged in developing and delivering Food Safety & Quality Assurance programs
o A bachelor's degree in a program related to the functional area can count for 3 of the eight-year requirement
o An MBA or a master's level degree in a program related to the functional area can count for an additional 2 years of the eight-year requirement
o In the industry: 3-5 years of Hospitality/ F&B experience
o ServSafe Food Safety Certification, ServSafe Alcohol, CP-FS (Certified Professional-Food Safety)
Specialized Training:
o Training that leads to technical expertise in FDA Model Food Code, FSMA, Code of Federal Regulations, General Microbiology, Public Health
o Training that leads to an in-depth knowledge of legal and regulatory ramifications of the food safety area
Specialized Skillset/Competencies/Traits
o Highly advanced business acumen and also has the strategic mindset required to understand the long-term implications of Food Safety & QA management decisions and to advance the organizations goals
o Demonstrated history of anticipating and balancing the needs of the business with the needs of complex stakeholders, the employee population and individual circumstances

Location/Travel: This position is remote and requires approximately 25% travel to airport locations
