Job Summary:

The Director of Food & Beverage has overall responsibility for the front-of-house service for all food and beverage outlets, event service, and all divisional associates. This position must have experience creating and implementing critical paths for all food & beverage operations, budgets, operating standards, job descriptions and training manuals for each position. This position is responsible for ongoing operations, refining operating standards and practices as needed based on business conditions, preparing all financial reports and annual budgets, meeting all goals and objectives set annually. The successful candidate will have impeccable professional references for exceptional leadership and communication skills, and cutting-edge technical food & beverage knowledge for operating a high-end Club food and beverage program.

Essential Job Functions:
  • Assist in the food and beverage outlets and events as needed.
  • Move through all Food and Beverage facility areas to visually monitor and take action to ensure member/guest experience and service standards are met.
  • Strong interactive skills with members and guests. Maintain communication with all departments to ensure guest service needs are met.
  • Actively engage in the creation and enhancement of member events and experiences.
  • Work in support of team goals and measure effectiveness through the club's Food & Beverage profit and service performance.
  • Implement and closely monitor the member feedback program to ensure member and guest satisfaction and continue to enhance the dining experience in all outlets.
  • Responsible for the selection, training, and development of key leadership personnel within each food and beverage operation.
  • Able to exercise personnel action discretion within Palmetto Bluff's policies.
  • Oversee divisional matters as they relate to federal, state, and local employment and civil rights laws.
  • Implement a continuous and comprehensive training program. For both front of house and back of house. and update training manuals.
  • Actively refine policies and procedures to ensure efficient systems are in place to ensure consistently high-quality service and reporting.
  • Train managers on accounting procedures and processes.
  • Ensure consistent one-on-one meetings with all direct reports take place.
  • Actively mentor and develop food and beverage managers and supervisors.
  • Strong understanding of all F&B-related applications and mentoring of managers and supervisors of software programs.
  • Assist in developing the annual food and beverage budget/plan and help manage it with the food and beverage outlets.
  • Control payroll and equipment costs (minimizing loss and misuse). Calculate inventory to ensure par stock levels are maintained. Evaluate the cost-effectiveness of all operations. Develop and implement cost-saving and profit-enhancing measures.
  • Control the elements that determine profit and loss. Responsible for all major operating expenses. Set margins and manage the business against projections. Make decisions that relate to profit and loss. Responsible for the financial management of the operation.

Qualifications:
  • Bachelor's Degree Preferred.
  • A minimum of 8 years of management experience in quality club, restaurant, or hotel food and beverage. Preferably having oversite of multiple dining outlets
  • A minimum of 5 years' experience as a club or resort operation department head.
  • Ideal candidate will have occupied a similar or higher position for one to two years.
  • Must be able to speak, read, write, and understand the primary language(s) used in the workplace.
  • Requires good communication skills, both verbal and written.
  • Ability to supervise subordinate staff, including, but not limited to, assignment of duties, evaluating service, and taking disciplinary action when necessary.
  • The ability to prepare and analyze data, figures, and transcriptions that are prepared and generated by computer.
  • Knowledge of club or restaurant food and beverage operations.
  • Knowledge of food and alcoholic beverages.
  • Must possess strong computer skills.
  • Budgetary analysis capabilities required.
  • Knowledge of food service techniques and cost controls such as manpower, productivity, food cost, and other expenses.

Physical Demands:
  • Work tasks may be performed indoors or outdoors.
  • The position requires walking and giving directions most of the working day.
  • Must be able to exert a well-paced ability to maneuver between functions occurring simultaneously.
  • It requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability, and visual acuity.
  • Must be able to lift trays of food or food items weighing up to 30 lbs. frequently.
  • Must be able to push and pull carts and equipment weighing up to 100 lbs. occasionally.
