Essential Duties/Responsibilities:
- Leading by example and oversee daily kitchen operations in collaboration with the Outlet Chef and provide support in their absence
- Collaborating with outlet chefs on seasonal, locally inspired menusand event execution.
- Learning food production for all outlets, inspecting the products to make sure they are high quality and consistent.
- Train, mentor, and inspire culinary teams.
- Scheduling culinary staff and assigning duties for efficient operation.
- Ensure top-quality food, presentation, and consistency. Comply with all the Forbes Standards across both Restaurants. Support private events or member experiences hosted in either restaurant.
- Read, write and communicate todecipher tickets, purchase order requisitions, restaurant event orders and preparation lists
- Maintain food and labor costs as per the budget by lowering meal premiums and overtimes.
- Instilling strong safety and sanitation habits in team members.
- Exhibiting a hands-on approach to ensuring quality, presentation, and consistency in meeting company standards.
- Effectively assigns tasks to ensure the efficient use of allocated labor and achievement of maximum results.
- Co-ordinating and following up with the Engineering department on kitchen maintenance.
- Maintaining ongoing knowledge of industry trends.
- Developing and maintaining good relationships with other departments.
- Recommending measures to improve production/service methods, equipment performance, scheduling, quality control, and suggesting changes in working conditions and use of equipment to increase efficiency and safety of the food service operations.
- Attend all meetings and training sessions as required and communicate with the team.
- Getting direct feedback from guests and members, channeling those feedback to make the product and service better.
- Other duties as assigned
Qualifications
Job Requirements:
- Culinary degree or equivalent degree in hotel management.
- Strong across all stations; passion for coastal, seasonal cuisine.
- Team-focused, positive leader who builds a great kitchen culture. Spanish speaking a plus.
- High volume and upscale restaurant experience.
- Banquet/Events experience is a plus.
- Minimum 3 yrs. experience in managerial role within an upscale food and beverage operation as an outlet chef.
- Ability to be present at work for assigned schedule including nights, weekends, holidays and extended hours when required.
An ideal candidate will have:
- A leader which demonstrates listening skills, team player and a great mentor.
- Thorough knowledge of food handling and preparation techniques.
- Prior experience in a high volume and upscale restaurant.
- Experience simultaneously managing multiple outlets.
- Understanding food and labor cost controls.
- Experience developing production sheets and schedules, job duties, and timelines.
- Proven leadership skills for achieving goals, while maintaining a high expectation of quality and presentation of standards.
- Proven ability to build and sustain team spirit and high morale.
- Computer Skills: knowledge of MS Office (Microsoft Word, Excel, and Outlook).
- Strong interpersonal and problem-solving abilities.
- Highly responsible and reliable.
- Ability to focus attention on guest needs.
