Four Seasons Hotel Seattle, is searching for an Executive Chef to join our incredible team of passionate service providers. Our Executive Chef will have a special talent and passion for ensuring the culinary team delivers the highest culinary standards consistently to make the food offering the center of our guest experience. The chosen candidate will have a wealth of culinary experience in luxury hotels, a desire to focus on the development of our team and bring a creative flair to menu design, while providing a personal touch and energy to all food and beverage experiences. Our Executive Chef will work in collaboration with our restaurant partner, Ethan Stowell (http://www.ethanstowellrestaurants.com). This position reports to the Director of Food and Beverage.

Key Elements of the Job
- Provide inspiration and leadership of the Culinary Department by establishing plans of character, integrity, and quality which result in the long-range continued growth and profitability of the department, division and Hotel. This position oversees heart-of-house operations for Goldfinch Tavern restaurant, Banquets, In-Room Dining, Pool and employee cafeteria outlets for the hotel.
- Oversee the selection, training, development, and evaluation of employees and managers in the Culinary Department.
- Ensure established culture and core standards are met.
- Innovate and coordinate long-range strategic planning for outlet operation.
- Control labor and operating expenses through effective planning, budgeting, purchasing decisions, policy making, and inventory control while focusing on creative cost control and revenue generation solutions to maximize profit in the department, division and hotel.
- Effectively plan and develop menus for the hotel considering factors such as product availability, food and service cost, marketing conditions and business volume.
- Assign prices for daily menus that result in net profit; participate in making decisions regarding printing, layout, posting, and distribution of menus while ensuring the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration.
- Ensure sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the kitchen.
- Establish control systems which will assure quality and portion consistency and the ability to create proper purchasing specifications as well as monitor and review operating criteria and develop an awareness of the importance of food preparation and quality.
- Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments.
- Build an open and trusting environment where everyone's opinion is shared and valued.
Preferred Qualifications and Experience
- At least 5-10 years of progressive leadership in multi-faceted culinary environment
- Culinary degree strongly preferred
- Strong line skills required to provide support to the team when needed
- Administrative acumen while maintaining primary focus on the kitchen operations
- Concept development and food and beverage strategy
- Communication capability across organization including employees, senior leaders, guests and residents
- Extensive background with menu engineering
- Able to understand scheduling practices, Washington State labor laws and how to produce payroll/labor reports
