Under the direction of the Hotel Manager, the incumbent plans and directs the overall Food & Beverage operations, Sessions, RT60, IRD & Stewarding, including all related management functions to ensure a positive guest experience.

Responsibilities

ESSENTIAL DUTIES
  • Drives P&L strength by implementing appropriate programs and systems and provides oversight to ensure adherence to such. Ensures strong fiscal responsibility is demonstrated by staff.
  • Utilize and/or create financial reporting tools to properly measure area's efficiency and financial success. Takes corrective action as necessary.
  • Develops and administers operating and capital budgets.
  • Conducts or reviews detailed management and operational analyses to ensure ongoing success and efficiency within the department.
  • Responsible for specifications and quality of all food and beverage products.
  • Controls all labor and beverage cost percentages.
  • Responsible for quality, consistency, and presentation of all food and beverage products delivered to guests.
  • Recommends to senior management operational enhancements that support initiatives and promote excellence.
  • Monitors profit and loss statements to ensure objectives are met, and recommends corrective actions as required.
  • Develop department members' knowledge and skills through education, training, coaching, corrective counseling, etc. Demonstrates a commitment to ensuring responsible gaming and responsible alcohol service by discreetly notifying appropriate management of concerns and observations.
  • Ensures prompt and discreet notification to appropriate management of any observation of illegal acts or internal ethics violations.
  • Ensures appropriate staffing levels to best manage labor costs while maintaining outstanding guest service.
  • Stays abreast of the current trends and practices within area of responsibility and communicates pertinent information to management, peers, direct reports and team members as appropriate.
  • Other duties as assigned.


Qualifications

  • 5-7 years' experience in hospitality management, including 3 years in a food and beverage leadership role. Upscale lifestyle hotel experience preferred.
  • Degree/diploma in Hospitality Management, or an equivalent combination of education and experience that provides knowledge, skills, and ability sufficient to successfully perform the duties of the position.
  • Experience working in a NYC Union environment or similar setting. Specifically, is both proficient in and working with the current edition of NYC CBA / IWA.
  • Working knowledge of local hospitality industry and culture; work experience in country preferred.

  • Ability to effectively present information in one-on-one and small group situations to customers, clients, owners, investors, and employees of the organization.
  • Ability to perform complex quantitative calculations or reasoning.
  • Ability to perform numerical operations using basic counting, adding, subtracting, multiplying or dividing.
  • Strong command of software applications, especially Microsoft Office (Word, Excel, PowerPoint) and hotel-specific platforms (MICROS Opera, Delphi, SUN, HotSOS, Open Table etc.).
  • Ability to effectively deal with internal and external customers and staff, some of whom will require high levels of patience, tact, and diplomacy.
  • Fluency in English: additional languages preferred.

  • Ability to tolerate exposure to heat, cold, chemicals, and loud/noisy environment.
  • Ability to operate potentially hazardous equipment.


ADDITIONAL REQUIREMENTS
  • Deep understanding of lifestyle hotels and premium dining products and services.
  • Passion for music and knowledge of music trends preferred.
  • Self-starter with an entrepreneurial spirit and strong organizational skills
  • Must meet legal requirements for any required licensing.
  • Ability to travel occasionally.
  • Ability to work evenings, weekends, and holidays, as needed.
  • Active participant in Executive Committee Meeting, staff meeting, and daily Management Sound Check.
  • Participation in the Manager on Duty program
  • Duties and responsibilities are typically performed in a professional office setting, but there may be times where you will need to be in operating areas.
  • In these areas, you may be exposed to environmental factors including, but not limited to, secondhand smoke and excessive noise.
  • While performing the duties of this job, the employee is frequently required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms, talk or hear; and taste or smell.
  • The team member must be able to lift and/or move up to 50 pounds.
  • Specific vision abilities required by this job include close, distance, color, and peripheral vision, depth perception and ability to adjust focus.
