THE JOB:

The Executive Director of Food & Beverage Operations provides visionary leadership and strategic oversight for all F&B venues and teams, ensuring excellence in service, quality, and guest experience in alignment with the MGM Resorts brand. This role is accountable for achieving financial and operational performance targets, developing high-performing leadership teams, optimizing labor and service models, and maintaining venue standards across all F&B operations. The Executive Director fosters a culture of innovation, collaboration, and continuous improvement to deliver exceptional dining experiences while upholding company policies, procedures, and service standards.

THE DAY-TO-DAY:
  • Provide strategic oversight to restaurant leadership teams, ensuring achievement of profitability goals and adherence to high standards of food quality, service, cleanliness, and guest experience.
  • Implement and enforce operating procedures, training programs, policies, menus, schedules, and staff guidelines to maintain consistency and excellence across all outlets.
  • Lead recruitment, training, coaching, and performance management of restaurant staff to foster a culture of engagement, growth, and operational excellence.
  • Continuously evaluate guest satisfaction across venues and recommend adjustments to operations, marketing, or service delivery based on trends, feedback, or competitive shifts.
  • Leverage tools and insights from Centers of Excellence (COEs) to drive sales, optimize labor, manage costs, and improve overall financial performance


THE IDEAL CANDIDATE:
  • Bachelor's degree in hospitality, Business, or a related field-or equivalent experience.
  • 4+ years of progressive leadership experience in Food & Beverage operations, preferably in a high-volume, resort environment.
  • Proven experience managing employees within a unionized workforce under a collective bargaining agreement.
  • Demonstrated ability to lead large, multi-property teams and influence cross-functional business decisions.
  • Experience overseeing large-scale capital projects, launching new concepts, and executing successful opening plans.
  • Strategic mindset with the ability to balance guest experience, operational efficiency, and financial performance.
  • Strong leadership, communication, and collaboration skills with a focus on innovation and continuous improvement.
